Born in Hollywood and raised in East Los Angeles, Chef Jose Vasquez discovered his passion for food at just nine years old—all thanks to a humble sandwich commercial. That spark ignited a lifelong journey through kitchens, across oceans, and into some of the most respected culinary roles in Southern California.
Chef Jose began his career cooking aboard submarines during his service in the U.S. Navy, where precision and creativity were essential under pressure. After formal training at Kapiʻolani Community College in Hawaii and further studies in Pasadena, CA, he built a reputation for bold flavors, technical skill, and thoughtful presentation.
Over the years, Chef Jose has led kitchens as Executive Chef at Tres LA, Chef de Cuisine at Carmelized Productions, and as Chef-Owner of Eastside Eats LA, which he operated for eight successful years. Now, he brings his expertise full circle as Chef de Cuisine once again at Carmelized Productions—driven by the same passion, discipline, and commitment to excellence that launched his journey.
